Corn oil, also known as maize oil, is extracted from the germ of corn (maize). It is primarily used in cooking due to its high smoke point, which makes it an excellent choice for frying. Corn oil is also a key ingredient in some margarines. Generally, corn oil is less expensive compared to other vegetable oils. A single bushel of corn yields about 1.55 pounds of corn oil, accounting for 2.8% of its weight. While agronomists have developed high-oil varieties of corn, these varieties typically have lower field yields and are not widely adopted by growers.
