White sugar is crystallized sucrose derived from sugarcane or sugar beets. After harvesting, the juice from these plants is extracted and boiled to remove moisture. As the moisture reduces, sucrose in the juice crystallizes. The crystallized sugar is then separated, leaving molasses as a byproduct.
